Description: French cuisine is renowned internationally as complex and instrumental to chefs in professional kitchens. One, however, does not need to pursue a Michelin Star to create delicious French dishes. On the contrary, with a little guidance, Chef Raphael will share some of his top family recipes (3-4 dishes), showcasing the simpler and often overlooked aspects of French cooking.
Goals: Our goal is to introduce you to another side of French cooking, the everyday side of things. We are not here to glamorize tiny morsels of food on giant white plates, or to cook everything in exorbitant amounts of butter. Rather, we seek to showcase the lighter and healthier qualities of French cuisine, the way grand-maman (grandma) taught us.

Avoiding Food Waste Class and Seminar

Description: Forty percent of all the food produced on the planet ends up as food waste. Whether it perishes in the fields or in the back of our refrigerators, many consider food waste one of the major issues in our food system. In this class and seminar we will present the issues broadly and then narrow down what we can do in our own homes to avoid wasting food. To do so we will prepare 3-4 recipes using common pantry ingredients which take into account the use of leftovers and safe storage and food prep.
Goal: This educational and interactive class seeks to identify causes of food waste and offers creative recipes and solutions for the home-cook to prevent waste altogether. With a better understanding of food safety, ingredients, and way of repurposing foods, together we can minimize food waste, learn new recipes, and save time and money in the kitchen.

Customize Your Own Cooking Class
Price: $100 per individual
Duration: 2 - 2.5 hours
Description: Personalize your own class based on what style of cuisine(s) you enjoy, what kind of skills you wish to improve upon, and the type of cooking you are looking to do (Meal Prepping for yourself vs cooking for a family). Chef Raphael will consider your needs and guide you through 3-4 recipes which reflect your tastes and curiosities.
Goals: Our goal is to break down the fundamental ingredients and techniques of your favorite cuisine in order for you to gain a better understanding of the flavors, profiles, and preparation of staple dishes. Once introduced, you can take your basic knowledge and apply them to different ingredients and regional specialities.
